OAT COOKIE WITH PECAN BUTTER

Chewy Flourless Pecan Butter Oatmeal Chip Cookies made with Tasteofnature Pecan Butter, oatmeal, and chocolate chips for a unique treat that tastes like a bite of pecan pie. No flour or butter is used in this easy recipe!

1 Cup pecan butter from Taste of Nature
1/2 Cup dark brown sugar
1 Large egg
1/2 Teaspoon vanilla
3/4 Cup gluten free oat
1/2 Teaspoon baking soda
1/2 Cup chocolate chips
1/2 Coconut flake, optional

Step 1
Preheat the oven to 350 degrees Fahrenheit. In a small bowl, mix together oats and baking soda; Sit aside.
Step 2
In a large bowl, beat the pecan butter, brown sugar, eggs, and vanilla with an electric mixer until smooth. Mix the dry ingredients with a wooden spoon, then gently add the chocolate chips.
Step 3
Place a tablespoon of cookie dough on the tray prepared with parchment paper, leaving a 2-inch space between them. Bake the cookies for 9-12 minutes then remove when the edges start to turn golden brown. The cookies may look a little underbaked, but they will continue to cook once you take them out of the oven.
Step 4
Cool for 5 minutes on a tray then transfer to a wire rack to cool completely. Repeat with remaining cookie dough. Makes 20 cookies.

It should be stored in an airtight container.

You can make these cookies using almond flour instead of oats.
Coconut is not listed in the nutritional information because it is optional.
