In a small bowl, mix together oats and baking soda; Sit aside.<br>Step 2<br>In a large bowl, beat the pecan butter, brown sugar, eggs, and vanilla with an electric mixer until smooth. Mix the dry ingredients with a wooden spoon, then gently add the chocolate chips.<br>Step 3<br>Place a tablespoon of cookie dough on the tray prepared with parchment paper, leaving a 2-inch space between them. Bake the cookies for 9-12 minutes then remove when the edges start to turn golden brown. The cookies may look a little underbaked, but they will continue to cook once you take them out of the oven.<br>Step 4<br>Cool for 5 minutes on a tray then transfer to a wire rack to cool completely. Repeat with remaining cookie dough.
